Ingredients
  

  • 1/2 cup butter
  • 4 scallions white parts only, minced
  • 1/2 cup fresh parsley, chopped
  • 2 tablespoons all-purpose flour
  • 1 pint half and half
  • 8 oz Swiss cheese, shredded
  • 1 tablespoon sherry
  • 1/4-1/2 teaspoon ground red pepper
  • 1 lb fresh claw or lump crabmeat

Instructions
 

  • Melt the butter in a heavy medium-sized saucepan over medium heat.
  • Add the minced scallions and parsley, and sauté for 1-2 minutes until fragrant.
  • Sprinkle in the flour, whisking constantly, and cook for another 1-2 minutes to form a roux.
  • Slowly add the half and half while whisking, then stir in the shredded Swiss cheese until it melts completely.
  • Add the sherry and ground red pepper to taste, mixing well.
  • Gently fold in the crabmeat, being careful not to break up the lumps. Heat for 2-3 minutes until the crab mixture is warm.
  • Serve the dip immediately, or place it in a chafing dish to keep warm. Garnish with chopped parsley or minced scallion greens.
