In a skillet over medium heat, cook the ground beef or shredded chicken until fully browned and cooked through. Drain any excess fat.
Add the taco seasoning to the meat and stir well to coat evenly. If desired, add a splash of water and simmer for a few minutes to deepen the flavors.
Warm the tortillas briefly in the microwave or on a dry skillet until pliable to prevent cracking.
Spoon the seasoned filling onto one half of each tortilla. Sprinkle shredded cheese on top, then fold the tortillas in half.
Lightly spray both sides of the folded tacos with cooking spray to help them crisp up nicely in the air fryer.
Arrange the tacos in a single layer in the air fryer basket. Use toothpicks if needed to keep them closed during cooking.
