Ingredients
  

  • 2 boneless skinless breasts chicken
  • 1/2 cup sugar-free BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste salt and pepper
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup shredded cheddar cheese (optional)
  • to garnish fresh cilantro or parsley

Instructions
 

  • Preheat grill or grill pan over medium-high heat.
  • Mix BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and pepper in a small bowl.
  • Brush half of the BBQ mixture onto chicken breasts.
  • Grill chicken 5-7 minutes per side, brushing with remaining sauce, until internal temperature reaches 165°F.
  • Let chicken rest 5 minutes, then slice into strips.
  • Divide salad greens, cherry tomatoes, cucumber, and onion among bowls.
  • Top with sliced chicken, shredded cheese, and garnish with cilantro or parsley.
  • Serve with lime wedges and extra BBQ sauce or vinaigrette if desired.
