Easy Maple Mustard Croissant Breakfast Sandwiches

Ingredients
  

  • 2 tablespoons maple syrup (for the maple mustard sauce)
  • 1 tablespoon Dijon mustard (for the maple mustard sauce)
  • 1 tablespoon mayonnaise (for the maple mustard sauce)
  • Pinch salt (for the maple mustard sauce)
  • 4 croissants (halved)
  • 4 large eggs
  • 2 tablespoons milk or cream (for scrambled eggs)
  • 4 sausage patties or bacon strips (cooked until crispy)
  • 4 slices cheddar, Swiss, or gouda cheese
  • 1 tablespoon butter (for scrambling eggs)
  • To taste salt and black pepper (for seasoning eggs)

Instructions
 

  • In a small bowl, whisk together maple syrup, Dijon mustard, mayonnaise, and a pinch of salt to make the maple mustard sauce. Set aside.
  • Cook the sausage patties or bacon in a skillet over medium heat until browned and crispy. Remove and set aside on paper towels to drain excess grease.
  • In a mixing bowl, whisk together eggs, milk or cream, salt, and black pepper. Melt butter in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, until light and fluffy.
  • Lightly toast the croissant halves in a toaster or oven until warm and slightly crispy.
  • Spread a generous layer of maple mustard sauce on the bottom half of each croissant. Top with a slice of cheese, cooked sausage or bacon, and a portion of scrambled eggs. Place the top half of the croissant over the filling.
  • If desired, place the assembled sandwiches in a warm oven for a few minutes to melt the cheese further.
  • Serve immediately alongside coffee, fresh fruit, or a smoothie. Enjoy!

Notes

Store assembled sandwiches in an airtight container in the fridge for up to 3 days. For longer storage, wrap individually in foil and freeze for up to 1 month. Reheat in a 350°F (175°C) oven for 10 minutes or microwave for 30-60 seconds.
