This slow cooker pork roast is juicy, tender, and full of savory herbs and garlic. Perfect for a hands-off family dinner, it’s cooked low and slow with carrots, onions, and potatoes, creating a comforting and flavorful meal.
Pat the pork roast dry with paper towels. Rub it all over with salt, black pepper, garlic powder, onion powder, dried thyme, and paprika.
Optional but recommended: Heat olive oil in a large skillet over medium-high heat. Sear the pork roast for 2-3 minutes on each side until golden brown.
Place the sliced onions, chopped carrots, and halved potatoes in the bottom of the slow cooker.
Set the seared pork roast on top of the vegetables in the slow cooker.
Pour the chicken broth and Worcestershire sauce over the roast and vegetables. Add the minced garlic, dried rosemary, and Dijon mustard if using.
Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the pork is fork-tender and shreds easily.
Remove the pork from the slow cooker and let it rest for a few minutes before slicing or shredding.
Serve the pork roast with the cooked vegetables and spoon some of the flavorful cooking juices over the top.
