Ingredients
  

  • 15 large fresh strawberries
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup graham crackers, crushed
  • Optional toppings: chocolate drizzle, chopped nuts, or shredded coconut

Instructions
 

  • Wash and dry the strawberries thoroughly. Remove the stems and hollow out the center of each strawberry using a paring knife or small spoon.
  • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Transfer the cheesecake filling to a piping bag or a resealable plastic bag with the corner snipped off.
  • Pipe the filling into the hollowed-out strawberries, filling each one generously.
  • Sprinkle crushed graham crackers over the top of the filling.
  • Add optional toppings like chocolate drizzle, chopped nuts, or shredded coconut for extra flavor and texture.
  • Refrigerate the cheesecake bites for at least 30 minutes to allow the filling to firm up.
  • Serve chilled and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 2 days. For longer storage, freeze the filled strawberries on a baking sheet, then transfer to a freezer-safe container for up to 1 month. Thaw in the refrigerator before serving.
