Ingredients
  

  • 2 pounds extra-large shrimp (21/25), peeled and deveined, optional tails removed
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon Old Bay Seasoning (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the shrimp on a baking sheet with sides.
  • Drizzle with olive oil and lemon juice. Toss the shrimp to evenly coat them.
  • Sprinkle with kosher salt, black pepper, and Old Bay Seasoning (if using). Toss again.
  • Roast in the oven for 8-10 minutes, or until the shrimp are opaque and cooked through. Do not overcook.
  • Once cooked, remove the shrimp from the oven immediately. Serve as is or refrigerate for shrimp cocktail.
