Ingredients
  

  • 1 cup mashed potatoes (plain, no added butter or milk)
  • 1 cup warm milk (110°F/45°C)
  • 1/3 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 and 1/4 teaspoons active dry yeast
  • 2 large eggs
  • 1 and 1/2 teaspoons salt
  • 4 to 5 cups all-purpose flour
  • 1 tbsp melted butter (for brushing)

Instructions
 

  • In a large mixing bowl, dissolve yeast in warm milk. Let it sit for 5–10 minutes until foamy.
  • Add mashed potatoes, softened butter, sugar, salt, and eggs to the yeast mixture. Stir to combine.
  • Gradually add flour, one cup at a time, until a soft dough forms. Knead on a lightly floured surface for 6–8 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm place for about 1 hour or until doubled in size.
  • Punch down the dough and divide it into 24 equal portions. Shape each portion into a ball and place them on a greased or parchment-lined baking sheet.
  • Cover the rolls and let them rise for 30–60 minutes until puffy.
  • Preheat the oven to 400°F (200°C). Bake the rolls for 10–12 minutes or until golden brown.
  • Brush warm rolls with melted butter before serving.
