In a large mixing bowl, dissolve yeast in warm milk. Let it sit for 5–10 minutes until foamy.
Add mashed potatoes, softened butter, sugar, salt, and eggs to the yeast mixture. Stir to combine.
Gradually add flour, one cup at a time, until a soft dough forms. Knead on a lightly floured surface for 6–8 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a clean towel, and let rise in a warm place for about 1 hour or until doubled in size.
Punch down the dough and divide it into 24 equal portions. Shape each portion into a ball and place them on a greased or parchment-lined baking sheet.
Cover the rolls and let them rise for 30–60 minutes until puffy.
Preheat the oven to 400°F (200°C). Bake the rolls for 10–12 minutes or until golden brown.
Brush warm rolls with melted butter before serving.
