Ingredients
  

  • 1 cup fresh watermelon, cubed
  • 4-5 leaves fresh mint
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon simple syrup (or agave nectar)
  • 1 1/2 ounces light rum
  • 1/4 cup club soda
  • as needed ice
  • for garnish mint sprigs
  • for garnish watermelon wedges
  • for garnish lime slices

Instructions
 

  • Blend fresh watermelon chunks in a blender until smooth. For a smoother texture, strain the purée through a fine mesh sieve and discard any solids.
  • In a tall glass or cocktail shaker, gently muddle 4-5 mint leaves with lime juice and simple syrup to release the mint's flavor.
  • Add light rum and watermelon purée to the glass or shaker. Fill with ice and stir or shake gently to combine.
  • Pour the mixture into a serving glass if mixed in a shaker, then top with club soda.
  • Garnish with a sprig of mint, a wedge of watermelon, or a slice of lime. Serve immediately and enjoy!
