In a small bowl, mix the warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
In a large mixing bowl, combine the flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
Knead the dough on a floured surface for 5-7 minutes until smooth and elastic, or use a stand mixer with a dough hook for 4-5 minutes.
Place the dough in a greased bowl, cover it, and let it rise for 1 to 1.5 hours or until doubled in size.
Punch down the dough and divide it into 12 equal pieces. Roll each into a rope and tie into loose knots. Place on a parchment-lined baking sheet.
Cover with a towel and let the knots rise again for 30 minutes.
Preheat oven to 400°F (200°C). Bake the knots for 12-15 minutes, or until golden brown.
Meanwhile, in a small saucepan, melt the butter. Add minced garlic and cook for 1-2 minutes. Remove from heat and stir in parsley and salt.
Brush the warm knots generously with the garlic butter topping after baking.
