Gozleme with Spinach and Feta

This traditional Turkish flatbread, Gozleme, is filled with a delicious mixture of sautéed spinach, crumbled feta cheese, and fresh herbs. Crisp on the outside and savory on the inside, it's a perfect appetizer, snack, or light meal.

Ingredients
  

  • 2 cups all-purpose flour plus more for dusting
  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 1 tablespoon olive oil for the dough
  • 1 tablespoon olive oil for cooking
  • 1 tablespoon olive oil for filling
  • 1 clove garlic minced
  • 4 cups fresh spinach roughly chopped
  • 1/2 cup feta cheese crumbled
  • 1 tablespoon chopped parsley optional
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large bowl, combine the flour and salt. Add warm water and 1 tablespoon olive oil. Mix until a dough forms.
  • Knead the dough on a floured surface for 5–7 minutes until smooth. Cover and let rest for 20 minutes.
  • In a skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and cook until fragrant. Add chopped spinach and sauté until wilted. Let cool.
  • In a bowl, mix the cooled spinach with crumbled feta, parsley, and black pepper.
  • Divide the dough into 4 equal portions. Roll each into a thin circle or oval.
  • Place filling on one half of each circle, fold over, and seal the edges.
  • Heat a large skillet over medium-high heat with 1 tablespoon olive oil. Cook each Gozleme for 2–3 minutes per side, or until golden brown and crispy.
  • Remove from heat, slice into wedges, and serve warm.
