Gozleme with Spinach and Feta
This traditional Turkish flatbread, Gozleme, is filled with a delicious mixture of sautéed spinach, crumbled feta cheese, and fresh herbs. Crisp on the outside and savory on the inside, it's a perfect appetizer, snack, or light meal.

In a large bowl, combine the flour and salt. Add warm water and 1 tablespoon olive oil. Mix until a dough forms.
Knead the dough on a floured surface for 5–7 minutes until smooth. Cover and let rest for 20 minutes.
In a skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and cook until fragrant. Add chopped spinach and sauté until wilted. Let cool.
In a bowl, mix the cooled spinach with crumbled feta, parsley, and black pepper.
Divide the dough into 4 equal portions. Roll each into a thin circle or oval.
Place filling on one half of each circle, fold over, and seal the edges.
Heat a large skillet over medium-high heat with 1 tablespoon olive oil. Cook each Gozleme for 2–3 minutes per side, or until golden brown and crispy.
Remove from heat, slice into wedges, and serve warm.
