Ingredients
  

  • 2 cups rolled oats
  • 1/2 cup chopped nuts (e.g., almonds, walnuts)
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • yogurt (Greek, dairy-free, or flavored), for filling
  • fresh fruit (berries, banana slices, kiwi, etc.), for topping

Instructions
 

  • Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone liners.
  • In a large mixing bowl, combine rolled oats, chopped nuts, cinnamon, and salt.
  • In a small saucepan over low heat, gently melt honey (or maple syrup), coconut oil, and brown sugar until fully combined. Remove from heat and stir in vanilla extract.
  • Pour the warm liquid mixture over the dry ingredients and mix thoroughly until everything is evenly coated and sticky.
  • Divide the granola mixture evenly among the 12 muffin cups. Using your fingers or the back of a spoon, press the mixture firmly into the bottom and up the sides to form a cup shape.
  • Bake for 12–15 minutes, or until the edges turn golden brown. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  • Once cooled, fill each granola cup with yogurt and top with fresh fruit or other desired toppings (e.g., shredded coconut, mini chocolate chips).
  • Serve immediately, or store unfilled granola cups in an airtight container for up to 1 week. Fill with yogurt and toppings just before serving.
