yogurt (Greek, dairy-free, or flavored), for filling
fresh fruit (berries, banana slices, kiwi, etc.), for topping
Instructions
Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone liners.
In a large mixing bowl, combine rolled oats, chopped nuts, cinnamon, and salt.
In a small saucepan over low heat, gently melt honey (or maple syrup), coconut oil, and brown sugar until fully combined. Remove from heat and stir in vanilla extract.
Pour the warm liquid mixture over the dry ingredients and mix thoroughly until everything is evenly coated and sticky.
Divide the granola mixture evenly among the 12 muffin cups. Using your fingers or the back of a spoon, press the mixture firmly into the bottom and up the sides to form a cup shape.
Bake for 12–15 minutes, or until the edges turn golden brown. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Once cooled, fill each granola cup with yogurt and top with fresh fruit or other desired toppings (e.g., shredded coconut, mini chocolate chips).
Serve immediately, or store unfilled granola cups in an airtight container for up to 1 week. Fill with yogurt and toppings just before serving.
