  • 4 pieces boneless skinless chicken thighs or breasts
  • 0.25 cup fresh lemon juice
  • 1 piece lemon zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1 piece lemon wedges (optional, for serving)

Instructions
 

  • In a mixing bowl or zip-top bag, whisk together lemon juice, lemon zest, minced garlic, olive oil, oregano, thyme, salt, and black pepper.
  • Add chicken pieces, ensuring they are fully coated in the marinade. Cover and refrigerate for at least 20 minutes or up to 2 hours for best flavor.
  • Preheat oven to 400°F (200°C) or heat grill/skillet over medium-high heat.
  • For oven method, place chicken in a baking dish, pour marinade over, and bake for 20–25 minutes until internal temperature reaches 165°F (74°C).
  • For grill or skillet method, cook chicken 5–7 minutes per side until golden brown and cooked through.
  • Remove chicken from heat and let rest for 5 minutes before slicing.
  • Garnish with chopped parsley and serve with lemon wedges on the side.
