Ingredients
  

  • 2 ½ lbs Yukon Gold or russet potatoes, cut into wedges
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup chicken or vegetable broth for extra flavor
  • ¼ cup fresh parsley, chopped for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Cut the potatoes into wedges and place them in a large mixing bowl.
  • In a separate bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Pour the marinade over the potatoes and toss to coat evenly. Arrange the potatoes on the baking sheet in a single layer.
  • Roast the potatoes for 40-50 minutes, flipping halfway, until they are golden and crispy.
  • Once roasted, sprinkle the potatoes with fresh parsley and serve hot.
