Ingredients
  

  • 2 1/2 lbs Yukon Gold or russet potatoes peeled and cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika optional, for color
  • 1/2 cup vegetable broth
  • 1/4 cup water
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a large baking dish.
  • In a large bowl, toss the potato wedges with olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
  • Spread the potatoes in a single layer in the baking dish.
  • Pour the broth and water over the potatoes to help them absorb flavor.
  • Roast for 40 minutes, stirring once halfway through. Increase heat to 425°F (220°C) and roast for an additional 15-20 minutes until golden and crispy.
  • Remove from oven, sprinkle with fresh parsley, and serve hot.
