  • 4 pieces lamb chops (rib or loin, about 1 inch thick)
  • 1/4 cup olive oil
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh rosemary (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional) For extra heat
  • 1 tablespoon Dijon mustard (optional) For extra flavor
  • 1 teaspoon oregano (optional) For a Mediterranean twist

Instructions
 

  • In a small bowl, whisk together olive oil, minced garlic, chopped rosemary, lemon juice, salt, and black pepper. For added flavor, you can include red pepper flakes, Dijon mustard, or oregano.
  • Pat the lamb chops dry and place them in a shallow dish or zip-top bag. Pour the marinade over the chops, ensuring they are evenly coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  • Preheat your grill to medium-high heat (400–450°F). Make sure the grill grates are clean and lightly oiled to prevent sticking.
  • Remove the lamb chops from the marinade and let them come to room temperature. Grill the chops for 3–4 minutes per side for medium-rare, or longer for your desired level of doneness.
  • Allow the lamb chops to rest for 5 minutes before serving. This ensures that the juices redistribute for maximum tenderness. Garnish with fresh herbs or a squeeze of lemon, if desired.
