Ingredients

  • 1 lb ground beef (80/20 recommended for juiciness)
  • 2 cloves garlic (minced)
  • 1 small onion (grated or finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1 tsp ground cumin
  • 1 tsp paprika or smoked paprika
  • 1/2 tsp ground coriander (optional)
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/4 tsp red pepper flakes or cayenne (optional, for heat)
  • 1 tbsp breadcrumbs or egg (optional binder)
  • 1 each metal or wooden skewers (soaked if wooden)

Instructions

  • In a large bowl, combine ground beef, minced garlic, grated onion, parsley, cumin, paprika, black pepper, salt, and optional cayenne. If needed, add breadcrumbs or egg to bind the mixture.
  • Mix the ingredients gently with your hands until well combined. Be careful not to overmix the meat.
  • Divide the mixture into equal portions and shape each portion around a skewer, forming long, sausage-like kebabs.
  • Preheat your grill to medium-high heat and oil the grates to prevent sticking.
  • Place the kebabs on the grill and cook for 4–5 minutes per side, turning gently, until they are fully cooked and charred on the outside. The internal temperature should reach 160°F.
  • Allow the kebabs to rest for a few minutes before serving.
