Irish Potato Farls

Irish Potato Farls are crispy and golden on the outside, soft and fluffy on the inside. Made with leftover mashed potatoes and flour, these farls are a perfect addition to any breakfast or a comforting snack!

Ingredients
  

  • 2 cups mashed potatoes (preferably cold and leftover)
  • 1 cup all-purpose flour, plus extra for dusting
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • Butter or oil as needed for frying

Instructions
 

  • In a large mixing bowl, combine mashed potatoes and salt. Gradually add flour, mixing until a soft dough forms.
  • Dust a clean surface with flour. Turn the dough out onto the surface and gently knead until smooth.
  • Roll the dough into a circle about 1/4 inch thick. Cut the dough into 4 equal wedges (farls).
  • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  • Place the farls in the skillet and cook for 3-5 minutes on each side, or until golden brown and crispy.
  • Serve warm with butter or alongside a traditional Irish breakfast.
