Killer Maple Mustard Croissant Breakfast Sandwiches

Ingredients
  

  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon hot sauce (optional)
  • 4 croissants, sliced in half
  • 8 slices bacon or breakfast sausage
  • 4 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter
  • salt and black pepper, to taste
  • 4 slices cheese (cheddar, Swiss, or pepper jack)

Instructions
 

  • In a small bowl, whisk together maple syrup, Dijon mustard, mayonnaise, and hot sauce until smooth. Set aside.
  • Cook bacon in a skillet over medium heat until crispy. Drain on paper towels.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Melt butter in a skillet over medium-low heat. Pour in the egg mixture and scramble gently until soft and fluffy.
  • Spread maple mustard sauce on both halves of each croissant.
  • Layer with cheese, scrambled eggs, and bacon.
  • Close the croissant and toast lightly in a pan or air fryer at 350°F (175°C) for 3-5 minutes until warm and crispy.
  • Serve immediately with extra maple mustard sauce if desired.
