  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup rolled oats or crisped rice cereal

Instructions
 

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the honey, then add the egg and vanilla extract, mixing until smooth.
  • Gently stir in the dried culinary lavender to infuse the dough with its fragrant aroma.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  • Fold in the rolled oats or crisped rice cereal to add a delightful crunch.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Slightly flatten each cookie with your hand or the back of a spoon.
  • Bake for 10–12 minutes until the edges are golden and centers are set.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
