Ingredients
  

  • 1.5 lb boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • to taste salt and black pepper
  • 1/4 cup fresh lemon juice
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1/2 cup chicken broth
  • 1 tbsp unsalted butter (optional)
  • for garnish fresh parsley or thyme

Instructions
 

  • Season the chicken with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken and cook for 5-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
  • Lower heat to medium and add minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
  • Stir in lemon juice, lemon zest, honey, Dijon mustard, and chicken broth. Scrape up any browned bits from the skillet.
  • Simmer the sauce for 3-4 minutes until slightly thickened.
  • Stir in butter if using, for extra gloss and richness.
  • Return chicken to the skillet and spoon glaze over each piece. Cook for another 2 minutes to coat well.
  • Garnish with fresh parsley or thyme and serve hot.
