Ingredients
  

  • 1 large bunch curly kale, stems removed and chopped (about 6 cups)
  • 1 tablespoon olive oil (for massaging)
  • 1/4 teaspoon salt
  • 1 cup croutons
  • 1/3 cup shaved or grated Parmesan cheese
  • freshly cracked black pepper (to taste)
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 1-2 tablespoons water (to thin dressing, if needed)

Instructions
 

  • Place the chopped kale in a large mixing bowl. Drizzle with olive oil and sprinkle with salt. Using clean hands, massage the kale for 2–3 minutes until it becomes tender and darker in color.
  • In a small mixing bowl or jar, whisk together mayonnaise, Dijon mustard, fresh lemon juice, lemon zest, Worcestershire sauce, minced garlic, and grated Parmesan cheese. Add water one tablespoon at a time to reach your desired consistency. Season with salt and black pepper to taste.
  • Pour the dressing over the massaged kale and toss thoroughly to ensure the leaves are evenly coated.
  • Sprinkle shaved or grated Parmesan cheese over the salad and add freshly cracked black pepper to taste.
  • Top with croutons just before serving. Optionally, drizzle with additional lemon juice or olive oil for extra brightness.
