1large bunchcurly kale, stems removed and chopped (about 6 cups)
1tablespoonolive oil (for massaging)
1/4teaspoonsalt
1cupcroutons
1/3cupshaved or grated Parmesan cheese
freshly cracked black pepper (to taste)
1/4cupmayonnaise
1tablespoonDijon mustard
2tablespoonsfresh lemon juice
1teaspoonlemon zest
1teaspoonWorcestershire sauce
1clovegarlic, minced
2tablespoonsgrated Parmesan cheese
1-2tablespoonswater (to thin dressing, if needed)
Instructions
Place the chopped kale in a large mixing bowl. Drizzle with olive oil and sprinkle with salt. Using clean hands, massage the kale for 2–3 minutes until it becomes tender and darker in color.
In a small mixing bowl or jar, whisk together mayonnaise, Dijon mustard, fresh lemon juice, lemon zest, Worcestershire sauce, minced garlic, and grated Parmesan cheese. Add water one tablespoon at a time to reach your desired consistency. Season with salt and black pepper to taste.
Pour the dressing over the massaged kale and toss thoroughly to ensure the leaves are evenly coated.
Sprinkle shaved or grated Parmesan cheese over the salad and add freshly cracked black pepper to taste.
Top with croutons just before serving. Optionally, drizzle with additional lemon juice or olive oil for extra brightness.
