This decadent Lobster Grilled Cheese combines rich, buttery lobster with melty cheese and golden, crispy bread for the ultimate indulgence. Perfect for a special treat or a gourmet twist on a classic favorite!
In a small bowl, gently toss the lobster meat with lemon juice, chopped chives or parsley, and melted butter. Set aside.
Butter the outside of each slice of bread. If using mayonnaise for extra crispiness, spread it lightly on the outer sides of the bread.
On one slice of bread, layer the shredded Gruyère cheese and mozzarella or fontina cheese evenly.
Top the cheese layer with the seasoned lobster meat, then add another layer of cheese.
Place the second slice of bread on top, with the buttered side facing out.
Heat a skillet over medium-low heat. Place the sandwich in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
Remove the sandwich from the skillet and let it rest for a minute. Slice and serve hot.
