Ingredients
  

  • 1 cup cooked lobster meat (tail or claw), chopped
  • 2 tbsp butter, melted
  • 1 tsp fresh lemon juice
  • 2 tbsp fresh chives or parsley, chopped
  • 4 slices sourdough or brioche bread
  • 1/2 cup shredded Gruyère cheese
  • 1/2 cup shredded mozzarella or fontina cheese
  • 1 tbsp mayonnaise (optional for extra crispiness)
  • 1 clove garlic, minced (optional)

Instructions
 

  • In a small bowl, gently toss the lobster meat with lemon juice, chopped chives or parsley, and melted butter. Set aside.
  • Butter the outside of each slice of bread. If using mayonnaise for extra crispiness, spread it lightly on the outer sides of the bread.
  • On one slice of bread, layer the shredded Gruyère cheese and mozzarella or fontina cheese evenly.
  • Top the cheese layer with the seasoned lobster meat, then add another layer of cheese.
  • Place the second slice of bread on top, with the buttered side facing out.
  • Heat a skillet over medium-low heat. Place the sandwich in the skillet and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  • Remove the sandwich from the skillet and let it rest for a minute. Slice and serve hot.

Notes

For an extra crispy sandwich, use mayonnaise on the outer sides of the bread.
