These Lucky Charms Cookies are soft, chewy, and packed with colorful Lucky Charms marshmallows and cereal pieces. Perfect for St. Patrick’s Day, kids’ parties, or whenever you want a whimsical dessert!
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
Mix in the egg and vanilla extract until fully combined.
Gradually add the dry ingredients to the wet mixture, mixing until fully incorporated.
Gently fold in the Lucky Charms cereal pieces and optional white chocolate chips.
Use a cookie scoop or tablespoon to roll the dough into evenly sized balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each ball.
Bake for 8-10 minutes, or until the edges are golden but the centers remain soft. Do not overbake.
Immediately after removing the cookies from the oven, press additional Lucky Charms marshmallows onto the warm cookies.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Optional: Drizzle melted white chocolate over the cooled cookies and sprinkle with rainbow sprinkles for extra decoration.
