Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (from 1-2 lemons)
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar (for topping)
  • 1/4 cup fresh lemon juice
  • 3/4 cup hot water

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, whisk together flour, 1 cup granulated sugar, baking powder, and salt.
  • In a separate bowl, combine milk, melted butter, vanilla extract, and lemon zest. Stir into the dry ingredients until smooth.
  • Pour melted butter into the bottom of a 9x9-inch baking dish.
  • Gently pour the batter over the melted butter. Do not stir.
  • In a small bowl, mix the brown sugar and 1/4 cup granulated sugar. Sprinkle this mixture evenly over the batter.
  • Combine lemon juice and hot water, then carefully pour over the top. Again, do not stir.
  • Bake for 40–45 minutes, until the top is golden brown and the cobbler has set.
  • Cool slightly before serving. Dust with powdered sugar or top with whipped cream or vanilla ice cream if desired.
