Ingredients
  

  • 2 cups cherry tomatoes, halved
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions
 

  • In a large bowl, combine the cherry tomatoes, olive oil, balsamic vinegar, minced garlic, salt, pepper, and red pepper flakes (if using).
  • Toss the tomatoes to coat evenly with the marinade.
  • Add the chopped basil and parsley, and stir gently to combine.
  • Cover the bowl and let the tomatoes marinate at room temperature for at least 30 minutes, or refrigerate for up to 4 hours to allow flavors to develop.
  • Stir the tomatoes gently before serving. Serve chilled or at room temperature as a side dish, salad topping, or bruschetta topping.
