Marry Me Salmon is a creamy, luxurious dish featuring pan-seared salmon fillets simmered in a rich garlic Parmesan sauce with sun-dried tomatoes and fresh basil. Perfect for a romantic dinner or special occasion.
1/2cupsun-dried tomatoes in oil, drained and chopped
1cupheavy cream
1/3cupgrated Parmesan cheese
1/2teaspoonred pepper flakes (optional)
1/4cupfresh basil, chopped
Lemon wedges, for serving
Instructions
Season the salmon fillets with salt and pepper on both sides.
In a large skillet over medium-high heat, heat olive oil. Add salmon fillets and cook for 3-4 minutes per side, or until golden and just cooked through. Remove from skillet and set aside.
Lower the heat to medium and add minced garlic to the same skillet. Sauté for 1 minute until fragrant.
Add the sun-dried tomatoes and cook for another minute.
Pour in the heavy cream and add the Parmesan cheese and red pepper flakes. Stir until the sauce is smooth and creamy.
Return the salmon fillets to the skillet, spooning some of the sauce over each fillet.
Simmer for 3-4 minutes, or until the salmon is warmed through and the sauce thickens slightly.
Sprinkle with fresh basil and serve with lemon wedges on the side.
