Ingredients
  

  • 4 salmon fillets (about 6 oz each), skin removed
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • Lemon wedges, for serving

Instructions
 

  • Season the salmon fillets with salt and pepper on both sides.
  • In a large skillet over medium-high heat, heat olive oil. Add salmon fillets and cook for 3-4 minutes per side, or until golden and just cooked through. Remove from skillet and set aside.
  • Lower the heat to medium and add minced garlic to the same skillet. Sauté for 1 minute until fragrant.
  • Add the sun-dried tomatoes and cook for another minute.
  • Pour in the heavy cream and add the Parmesan cheese and red pepper flakes. Stir until the sauce is smooth and creamy.
  • Return the salmon fillets to the skillet, spooning some of the sauce over each fillet.
  • Simmer for 3-4 minutes, or until the salmon is warmed through and the sauce thickens slightly.
  • Sprinkle with fresh basil and serve with lemon wedges on the side.
