Mashed Cauliflower with Sour Cream

Ingredients
  

  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • to taste salt
  • to taste freshly ground black pepper
  • 1 tablespoon chopped fresh chives or parsley (optional)

Instructions
 

  • Bring a large pot of water to a boil and add the cauliflower florets. Cook for 10 to 12 minutes or until very tender.
  • Drain the cauliflower thoroughly in a colander and let it sit for a few minutes to release excess moisture. Pat dry with paper towels if needed.
  • While the cauliflower cooks, melt the butter in a small pan over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant.
  • Transfer the cooked cauliflower to a food processor or blender. Add the garlic butter and sour cream.
  • Blend until smooth and creamy. You can mash by hand for a chunkier texture if preferred.
  • Season with salt and freshly ground black pepper to taste.
  • Transfer the mash to a serving bowl and garnish with chopped chives or parsley if desired.
  • Serve warm and enjoy!
