Mashed Cauliflower with Sour Cream

Bring a large pot of water to a boil and add the cauliflower florets. Cook for 10 to 12 minutes or until very tender.
Drain the cauliflower thoroughly in a colander and let it sit for a few minutes to release excess moisture. Pat dry with paper towels if needed.
While the cauliflower cooks, melt the butter in a small pan over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant.
Transfer the cooked cauliflower to a food processor or blender. Add the garlic butter and sour cream.
Blend until smooth and creamy. You can mash by hand for a chunkier texture if preferred.
Season with salt and freshly ground black pepper to taste.
Transfer the mash to a serving bowl and garnish with chopped chives or parsley if desired.
