Mexican Paletas Popsicles

Wash, peel (if necessary), and chop the fresh fruit into small pieces.
In a blender, combine the chopped fruit, sugar, water (or milk/cream for creamy variations), lime juice (if using), and salt. Blend until smooth.
Taste the mixture and adjust the sweetness by adding more sugar or honey if needed.
Optional: For a smoother texture, strain the blended mixture through a fine mesh sieve to remove pulp and seeds.
Pour the mixture into popsicle molds, leaving a small gap at the top for expansion.
Insert wooden sticks into the molds.
Freeze the molds for at least 4–6 hours, or until completely solid.
To unmold, run warm water over the outsides of the molds for a few seconds. Gently wiggle the sticks to release the paletas.
Serve immediately and enjoy!
