Bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until pink and opaque.
Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process.
In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce (if using). Stir until well combined.
Add the cooked shrimp, diced cucumber, chopped red onion, jalapeño, and cilantro to the bowl with the sauce. Mix gently.
Fold in the diced avocado right before serving to keep it fresh and firm.
