Ingredients
  

  • 1 pound shrimp, peeled and deveined
  • 2 cups tomato juice
  • 1/2 cup ketchup
  • 1 large cucumber, diced
  • 1 large avocado, diced
  • 1/2 medium red onion, finely chopped
  • 1/4 cup cilantro, freshly chopped
  • 1 whole jalapeño, seeded and finely chopped
  • 3 whole limes, juiced
  • to taste salt and pepper
  • a few dashes hot sauce (optional)
  • to serve tostadas or saltine crackers

Instructions
 

  • Bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until pink and opaque.
  • Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process.
  • In a large bowl, combine tomato juice, ketchup, lime juice, and hot sauce (if using). Stir until well combined.
  • Add the cooked shrimp, diced cucumber, chopped red onion, jalapeño, and cilantro to the bowl with the sauce. Mix gently.
  • Fold in the diced avocado right before serving to keep it fresh and firm.
  • Season with salt and pepper to taste and refrigerate for at least 30 minutes before serving.
  • Serve chilled, garnished with extra cilantro or lime wedges. Pair with tostadas or saltine crackers for crunch.
