Ingredients
  

  • 1 1/2 cups long-grain white rice (uncooked)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can cream of celery soup (10.5 oz)
  • 1 1/2 cups low-sodium chicken broth
  • 1 envelope onion soup mix
  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • to taste salt and pepper
  • optional chopped fresh parsley for garnish

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
  • In the casserole dish, mix uncooked rice, cream of chicken soup, cream of celery soup, and chicken broth until well combined.
  • Season chicken breasts with salt and pepper and place evenly over the rice mixture.
  • Sprinkle the onion soup mix evenly over the chicken and rice mixture.
  • Cover tightly with aluminum foil and bake for 1 hour and 30 minutes without opening the oven.
  • Remove from oven, let rest for a few minutes, garnish with parsley if desired, and serve warm.
