Instructions
Season the shrimp with Old Bay seasoning until evenly coated.
Heat olive oil in a skillet over medium heat and cook shrimp for 2-3 minutes per side, or until they turn pink and opaque. Remove from heat.
Warm tortillas in a dry skillet or microwave.
Assemble the burritos by placing rice, black beans, shrimp, vegetables, and avocado in the center of each tortilla.
Top with sour cream or Greek yogurt, and a squeeze of fresh lime juice.
Roll up the tortillas tightly, folding in the sides as you go.
Slice in half and serve with additional lime wedges or salsa on the side.
Notes
Customize with additional toppings like pico de gallo or corn, or swap shrimp for other proteins.
