6cupspeeled and thinly sliced fresh pears (about 6-7 medium pears)
3/4cupgranulated sugar
2tablespoonsall-purpose flour
3/4teaspoonground cinnamon
1/4teaspoonkosher salt
1/8teaspoonground nutmeg
1tablespoonfresh lemon juice
2refrigerated pie crustsstore-bought or homemade
Instructions
Preheat the oven to 425°F (220°C).
Place one pie crust in an ungreased 9-inch glass pie plate. Press the crust firmly into the bottom and sides.
In a large mixing bowl, combine the sliced pears, sugar, flour, cinnamon, salt, nutmeg, and lemon juice. Gently toss the ingredients together until the pears are evenly coated.
Spoon the pear mixture into the prepared pie crust, spreading it evenly.
Place the second pie crust on top. Trim the excess crust, fold the top crust over and under the bottom crust, and press the edges together to seal.
Crimp the edges by pinching the crust with your fingers or pressing with a fork. Cut a few slits in the top crust to allow steam to escape.
Bake the pie for 20 minutes. After 20 minutes, cover the edges with aluminum foil to prevent over-browning and bake for an additional 20-25 minutes, until the crust is golden and the filling is bubbling.
Cool the pie on a wire rack for at least 2 hours before slicing. This allows the filling to set.
