Ingredients
  

  • 6 cups peeled and thinly sliced fresh pears (about 6-7 medium pears)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 refrigerated pie crusts store-bought or homemade

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Place one pie crust in an ungreased 9-inch glass pie plate. Press the crust firmly into the bottom and sides.
  • In a large mixing bowl, combine the sliced pears, sugar, flour, cinnamon, salt, nutmeg, and lemon juice. Gently toss the ingredients together until the pears are evenly coated.
  • Spoon the pear mixture into the prepared pie crust, spreading it evenly.
  • Place the second pie crust on top. Trim the excess crust, fold the top crust over and under the bottom crust, and press the edges together to seal.
  • Crimp the edges by pinching the crust with your fingers or pressing with a fork. Cut a few slits in the top crust to allow steam to escape.
  • Bake the pie for 20 minutes. After 20 minutes, cover the edges with aluminum foil to prevent over-browning and bake for an additional 20-25 minutes, until the crust is golden and the filling is bubbling.
  • Cool the pie on a wire rack for at least 2 hours before slicing. This allows the filling to set.
