Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 1/2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta
  • 3/4 cup grated parmesan cheese
  • 1 tbsp fresh basil or parsley, chopped

Instructions
 

  • Heat olive oil in a large pot or deep skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Sear until golden and cooked through, about 5-7 minutes. Remove chicken and set aside.
  • In the same pot, sauté garlic until fragrant, then add sun-dried tomatoes. Stir for 1-2 minutes.
  • Pour in chicken broth and heavy cream, bring to a simmer.
  • Add uncooked penne pasta, stir to coat. Let cook for 10-12 minutes until pasta is al dente and sauce thickens.
  • Slice cooked chicken and return to the pot. Stir in parmesan cheese until melted.
  • Adjust seasoning with salt, pepper, and red pepper flakes if desired. Garnish with fresh basil or parsley before serving.
