Ingredients
  

  • 8 pieces chicken legs (drumsticks), skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 0.5 teaspoon cayenne pepper (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and place a wire rack on top.
  • Pat the chicken legs dry with paper towels to help crisp the skin.
  • In a large bowl, toss chicken legs with olive oil until well coated.
  • In a small bowl, mix garlic powder, onion powder, smoked paprika, Italian seasoning, salt, black pepper, and cayenne pepper (if using).
  • Rub the seasoning mix evenly over each chicken leg.
  • Arrange the chicken legs on the wire rack in a single layer, leaving space between each piece.
  • Bake for 35-45 minutes, flipping halfway through, until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.
  • Let the chicken rest for 5 minutes before serving. Garnish with fresh chopped parsley.
