Ingredients
  

  • 1 whole chicken (4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lemon, cut into wedges
  • 1 head garlic, halved
  • 1 bunch fresh herbs (optional: rosemary, thyme, parsley)

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a roasting pan with foil or lightly grease it.
  • Pat the chicken dry with paper towels to help the skin get crispy.
  • In a small bowl, mix olive oil, garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper.
  • Rub the seasoning mixture all over the chicken, including under the skin and inside the cavity.
  • Stuff the chicken cavity with lemon wedges, garlic halves, and fresh herbs, if using.
  • Tie the legs together with kitchen twine and tuck the wing tips under the body.
  • Place the chicken breast-side up in the roasting pan.
  • Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the chicken.
  • Let the chicken rest for 10-15 minutes before carving. Serve and enjoy!
