This whimsical Peeps Sunflower Layer Cake features fluffy vanilla cake layers, creamy frosting, and playful Peeps marshmallow petals arranged to look like a sunflower. Perfect for Easter, birthdays, or any spring celebration!

Instructions
Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Alternately add the dry ingredients and milk to the wet mixture, starting and ending with the dry ingredients. Mix until just combined.
Divide batter evenly among prepared cake pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean.
Cool the cakes in their pans for 10 minutes before transferring to wire racks to cool completely.
Make the frosting by beating together powdered sugar, cream cheese (if using), and butter until smooth and fluffy. Add yellow food coloring if desired.
Once cakes are completely cooled, spread frosting between each layer and around the sides and top.
For decoration, arrange Peeps marshmallows around the top of the cake to resemble sunflower petals. Use black decorating gel or edible black pearls to create the sunflower center.
Chill the cake for 30 minutes to set the frosting, then serve at room temperature.
