Ingredients
  

  • 1 sheet refrigerated pie crust
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni or chopped pepperoni
  • 1/2 cup diced bell pepper
  • 1/2 cup sliced mushrooms
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 large egg, beaten

Instructions
 

  • Preheat oven to 375°F (190°C). Grease six 4- to 6-ounce ramekins or a muffin tin.
  • Roll out the pie crust and cut six circles slightly larger than the ramekin tops.
  • Press the crust into the ramekins or muffin cups, leaving an overhang.
  • In a bowl, mix pizza sauce with Italian seasoning, then spoon about 2 tablespoons into each crust.
  • Layer mozzarella, pepperoni, bell pepper, mushrooms, and a sprinkle of Parmesan in each.
  • Fold the excess crust over the filling to create a rustic top—leave the center open or cover and flute edges.
  • Brush the edges (and top if covered) with beaten egg for a golden finish.
  • Bake for 20-25 minutes until crust is puffed and golden and cheese is bubbly.
  • Let cool 5 minutes before serving. Cut crust edges if needed to release pot pies from ramekins.
