Poor Man’s Husband Casserole is a budget-friendly, hearty, and comforting dish that combines ground beef, pasta, creamy sauce, and melted cheese into one deliciously cheesy casserole. Perfect for busy weeknights and family meals on a budget.
Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter.
Cook the egg noodles in a large pot of salted boiling water according to package instructions. Drain and set aside.
In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic until the beef is browned. Drain any excess grease.
Stir in the tomato sauce, diced tomatoes (with juices), Worcestershire sauce, garlic powder, onion powder, salt, pepper, and Italian seasoning. Simmer for 5-7 minutes, then remove from heat.
In a medium bowl, mix the softened cream cheese, sour cream, and 1 cup of shredded cheddar cheese until smooth and creamy.
In the greased baking dish, layer the casserole: spread half of the cooked egg noodles at the bottom, followed by half of the meat sauce mixture. Spread the creamy cheese mixture over the top. Repeat with the remaining noodles and meat sauce, ending with the sauce on top.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the casserole. If desired, sprinkle crushed crackers or breadcrumbs on top for added crunch.
Bake for 25-30 minutes, until the cheese is melted and bubbly.
Let the casserole cool for 5 minutes before serving. Enjoy!
