Ingredients
  

  • 4 cups cooked shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 tablespoon poppy seeds
  • 1 sleeve Ritz crackers, crushed
  • 4 tablespoons butter, melted
  • to taste salt
  • to taste black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, poppy seeds, salt, and pepper. Stir until well combined.
  • Spread the chicken mixture evenly into a greased 9x13-inch baking dish.
  • In a small bowl, combine crushed Ritz crackers with melted butter. Stir until the crackers are fully coated in the butter.
  • Sprinkle the buttery cracker topping evenly over the chicken mixture.
  • Bake uncovered for 25-30 minutes, or until the top is golden brown and the casserole is hot and bubbly.
  • Let the casserole cool for 5 minutes before serving.
