Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • to taste salt and pepper
  • 1/2 cup chicken broth
  • 1 cup queso dip (store-bought or homemade)
  • 8 small flour or corn tortillas
  • optional shredded lettuce
  • optional diced tomatoes
  • optional jalapeños
  • optional chopped cilantro
  • optional lime wedges

Instructions
 

  • Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
  • Heat olive oil in a skillet over medium heat. Add chicken and sear for 2–3 minutes per side.
  • Add chicken broth, cover, and simmer for 15–20 minutes, or until chicken is cooked through and tender.
  • Remove chicken from the skillet, shred with two forks, and return to the skillet.
  • Stir in queso dip and mix until chicken is evenly coated. Heat until warmed through.
  • Warm tortillas in a skillet or microwave.
  • Assemble tacos by filling each tortilla with queso chicken and adding desired toppings.
  • Serve immediately with lime wedges.
