Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 2 large eggs
  • 1.75 cups milk
  • 0.33 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • as needed gel food coloring (red, orange, yellow, green, blue, purple)
  • as needed nonstick cooking spray

Instructions
 

  • Preheat waffle iron according to manufacturer’s instructions and spray with nonstick cooking spray.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the eggs, milk, oil (or melted butter), and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  • Divide the batter evenly into 6 small bowls. Add a few drops of different gel food coloring to each bowl to create red, orange, yellow, green, blue, and purple batters.
  • Spoon small amounts of each colored batter into the waffle iron in a circular pattern or stripes to create a rainbow effect.
  • Close the lid and cook according to waffle iron directions until golden and crisp, about 3-5 minutes.
  • Carefully remove waffles and serve warm with syrup, whipped cream, or fresh fruit.
