Ingredients
  

  • 1 medium carrot, peeled and chopped
  • 0.5 cup almond butter
  • 0.5 cup pure maple syrup or Medjool dates
  • 2 cups old-fashioned oats
  • 2 cups unsweetened flaked coconut
  • 0.5 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • optional: pinch of ginger or nutmeg
  • optional: white chocolate chips, raisins, or chopped nuts

Instructions
 

  • Pulse the chopped carrot in a food processor until finely shredded.
  • Add oats and coconut, then pulse to a coarse texture.
  • Add almond butter, maple syrup or dates, salt, vanilla, and spices. Process until a sticky dough forms.
  • Optional: pulse in white chocolate chips, raisins, or nuts.
  • Roll dough into small balls using about 1 tablespoon per bite.
  • Chill in the refrigerator for at least 15 minutes before serving.
