Pulse the chopped carrot in a food processor until finely shredded.
Add oats and coconut, then pulse to a coarse texture.
Add almond butter, maple syrup or dates, salt, vanilla, and spices. Process until a sticky dough forms.

Roll dough into small balls using about 1 tablespoon per bite.
