Ingredients
  

  • 1 1/2 cups finely chopped corned beef
  • 1 1/2 cups shredded Swiss cheese
  • 1/2 cup well-drained sauerkraut
  • 1 tablespoon Dijon mustard
  • 1 1/2 cups rye breadcrumbs (or regular breadcrumbs with caraway seeds)
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons pickle relish
  • 1 tablespoon hot sauce adjust to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder

Instructions
 

  • In a large bowl, mix corned beef, Swiss cheese, sauerkraut, cream cheese, and Dijon mustard until well combined.
  • Roll the mixture into bite-sized balls and freeze them on a parchment-lined baking sheet for 30 minutes to firm up.
  • Set up a breading station with flour, beaten eggs, and breadcrumbs. Roll each ball in the flour, dip in egg, and coat with breadcrumbs.
  • Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the balls in batches for 2-3 minutes or until golden brown. Drain on paper towels.
  • In a small bowl, mix mayonnaise, ketchup, pickle relish, hot sauce, paprika, and garlic powder to make the dipping sauce. Refrigerate for 15 minutes.
  • Serve the crispy Reuben balls with the spicy Thousand Island dipping sauce. Enjoy!
