Rice Krispie Easter Nests

Ingredients
  

  • 3 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1/2 teaspoon vanilla extract (optional)
  • cooking spray or butter for greasing
  • 1-2 cups mini candy eggs (Cadbury Mini Eggs, M&M’s, or jelly beans)
  • 1 cup shredded coconut (green-tinted, optional)

Instructions
 

  • Lightly grease a muffin tin with cooking spray or butter.
  • In a large saucepan over medium-low heat, melt the butter gently.
  • Add mini marshmallows and stir continuously until completely melted and smooth.
  • Remove from heat and stir in vanilla extract if using.
  • Quickly fold in the Rice Krispies cereal until all pieces are evenly coated with the marshmallow mixture.
  • Grease your hands with butter or cooking spray, then scoop portions of the mixture into each muffin cup.
  • Press gently and shape each portion into a nest with a small well in the center for the candy eggs.
  • Let the nests cool and set in the muffin tin for about 30 minutes at room temperature.
  • Once firm, carefully remove the nests from the tin.
  • Fill each nest with green-tinted shredded coconut or edible grass, then top with 2–3 mini candy eggs.
