Lightly grease a muffin tin with cooking spray or butter.
In a large saucepan over medium-low heat, melt the butter gently.
Add mini marshmallows and stir continuously until completely melted and smooth.
Remove from heat and stir in vanilla extract if using.
Quickly fold in the Rice Krispies cereal until all pieces are evenly coated with the marshmallow mixture.
Grease your hands with butter or cooking spray, then scoop portions of the mixture into each muffin cup.
Press gently and shape each portion into a nest with a small well in the center for the candy eggs.
Let the nests cool and set in the muffin tin for about 30 minutes at room temperature.
Once firm, carefully remove the nests from the tin.
Fill each nest with green-tinted shredded coconut or edible grass, then top with 2–3 mini candy eggs.
