Roasted Cauliflower Tacos with Creamy Avocado Sauce

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a mixing bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, chili powder, salt, and black pepper.
Spread the cauliflower evenly on the baking sheet and roast for 20–25 minutes, flipping halfway through, until golden and crisp.
While the cauliflower roasts, blend the avocado, lime juice, yogurt, cilantro, garlic, olive oil, and salt in a blender or food processor until smooth. Add water gradually to thin, if needed.
Warm the tortillas in a dry skillet over medium heat for 30 seconds per side, or wrap in foil and warm in the oven.
Assemble tacos by filling each tortilla with roasted cauliflower, shredded cabbage or lettuce, diced tomatoes or salsa, and a drizzle of avocado sauce. Garnish with chopped cilantro if desired.
