Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Unfold the puff pastry on the prepared baking sheet. If using a larger sheet of pastry, trim to fit your brie.
Remove the rind from the brie, if preferred. Place the brie in the center of the puff pastry.
Fold the puff pastry up and over the brie, sealing the edges underneath to completely enclose the cheese.
In a small bowl, whisk together the egg and milk to create an egg wash. Brush the egg wash over the pastry to give it a golden finish.
If desired, sprinkle coarse sugar over the top of the pastry for added texture and sweetness.
Bake the puff pastry for 20–25 minutes, or until the pastry is puffed, golden brown, and crispy.
Remove from the oven and immediately drizzle with honey.
Sprinkle with crushed pistachios and a pinch of flaky sea salt.
Let the pastry rest for 5 minutes before slicing and serving warm.
