Ingredients
  

  • 6-8 breakfast sausage links or ground sausage
  • 4 large eggs
  • 2 tbsp milk (optional, for fluffier eggs)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 6-8 tortillas (flour or whole wheat)
  • 1 tbsp butter or oil (for cooking eggs)

Instructions
 

  • Prepare the Sausage: Heat a skillet over medium heat. Cook sausage links until browned and fully cooked, about 8-10 minutes. If using ground sausage, cook until browned and crumbled. Remove from the skillet and set aside.
  • Scramble the Eggs: In a bowl, whisk together eggs and milk (if using). Season with salt and pepper. Melt butter in the same skillet over medium heat. Add the egg mixture and cook, stirring gently, until soft and scrambled. Remove from heat.
  • Warm the Tortillas: Heat tortillas in a dry skillet for about 10 seconds per side, or microwave them for 15-20 seconds wrapped in a damp paper towel to make them pliable.
  • Assemble the Roll-Ups: Lay a warmed tortilla flat on a clean surface. Place a cooked sausage link or spoonful of crumbled sausage in the center. Add a portion of scrambled eggs and sprinkle with shredded cheese. Fold in the sides of the tortilla, then roll tightly from one end to the other to enclose the filling.
  • Optional Heating: For crispy roll-ups, lightly toast them seam-side down in a skillet for 1-2 minutes on each side.
  • Serve: Serve warm with optional toppings like salsa, hot sauce, or sliced avocado on the side. Pair with fresh fruit, hash browns, or a simple green salad for a complete meal.

Notes

For a vegetarian option, replace sausage with sautéed veggies like bell peppers or spinach. Store leftovers tightly wrapped in foil or plastic wrap in the fridge for up to 3 days or freeze for longer storage.
