Ingredients
  

  • 1 lb Italian sausage (mild or spicy), casing removed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium zucchini, diced
  • 1 medium bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 4 cups chicken or vegetable broth
  • 1 cup green beans, trimmed and cut into pieces
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 cup baby spinach (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add sausage and cook until browned, breaking it up with a spoon (5–7 minutes). Remove excess grease if needed.
  • Add onion, garlic, carrots, and celery. Sauté for 3–4 minutes until slightly softened.
  • Stir in zucchini, bell pepper, green beans, diced tomatoes (with juice), broth, Italian seasoning, smoked paprika, salt, and pepper.
  • Bring the soup to a boil, then reduce heat to low and simmer for 20 minutes, until vegetables are tender.
  • Stir in baby spinach and cook for 2–3 minutes until wilted.
  • Taste and adjust salt and pepper as needed. Serve hot, garnished with fresh parsley.
