▢ 1 lb Italian sausage (mild or spicy), casing removed ▢ 1 tablespoon olive oil ▢ 1 medium onion, diced ▢ 3 cloves garlic, minced ▢ 2 medium carrots, sliced ▢ 2 celery stalks, sliced ▢ 1 medium zucchini, diced ▢ 1 medium bell pepper, diced (any color) ▢ 1 can (14.5 oz) diced tomatoes, with juice ▢ 4 cups chicken or vegetable broth ▢ 1 cup green beans, trimmed and cut into pieces ▢ 1 teaspoon dried Italian seasoning ▢ 1/2 teaspoon smoked paprika (optional) ▢ 1/2 teaspoon salt (adjust to taste) ▢ 1/4 teaspoon black pepper ▢ 1 cup baby spinach (optional) ▢ 1 tablespoon fresh parsley, chopped (for garnish)
In a large pot or Dutch oven, heat olive oil over medium heat.
Add sausage and cook until browned, breaking it up with a spoon (5–7 minutes). Remove excess grease if needed.
Add onion, garlic, carrots, and celery. Sauté for 3–4 minutes until slightly softened.
Stir in zucchini, bell pepper, green beans, diced tomatoes (with juice), broth, Italian seasoning, smoked paprika, salt, and pepper.
Bring the soup to a boil, then reduce heat to low and simmer for 20 minutes, until vegetables are tender.
Stir in baby spinach and cook for 2–3 minutes until wilted.
Taste and adjust salt and pepper as needed. Serve hot, garnished with fresh parsley.
