Sausage & Maple Waffle Bake

Ingredients
  

  • 8 pieces frozen waffles, lightly toasted and cut into cubes
  • 1 pound maple breakfast sausage, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 8 large eggs
  • 1 1/4 cups milk
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • to taste freshly ground black pepper
  • as needed butter or nonstick spray for greasing
  • optional extra maple syrup for serving

Instructions
 

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or nonstick spray.
  • In a skillet over medium heat, cook the maple breakfast sausage until browned and cooked through. Drain excess grease and set aside.
  • Lightly toast the frozen waffles and let them cool slightly. Cut them into bite-sized cubes.
  • In the prepared baking dish, layer half of the waffle cubes evenly. Top with half of the cooked sausage and half of the shredded cheddar cheese.
  • Repeat the layers with the remaining waffles, sausage, and cheese.
  • In a large mixing bowl, whisk together the eggs, milk, pure maple syrup, vanilla extract, ground cinnamon, salt, and freshly ground black pepper.
  • Pour the egg mixture evenly over the layered waffles and sausage in the baking dish. Gently press down to help the custard soak into the waffles.
  • Cover the dish and refrigerate for at least 1 hour or overnight to let the waffles soak up the custard.
  • Uncover the dish and bake in the preheated oven for 45-50 minutes, until the top is golden brown and the eggs are fully set.
  • Allow the casserole to cool for about 10 minutes before slicing. Serve warm with extra maple syrup if desired.
